This spinach and turkey sausage fritatta is just as yummy as a quiche, but with fewer calories and carbs



16 ounces Turkey Italian Sausage

20 ounce package frozen spinach

1 medium onion

2 tablespoons olive oil

salt and pepper

1 teaspoon garlic powder

6 eggs

1 cup ricotta cheese

2 cups shredded mozzarella cheese


Preheat the oven to 375 degrees.

Dice the onion and saute in olive oil. Add the sausage to the pan and cook, breaking the meat into crumbles until it’s no longer pink.

Remove from the heat and drain. Let cool slightly.

Squeeze the liquid out of the spinach and put into a large bowl. Season with salt, pepper, and 1 teaspoon garlic powder. Stir well.

Stir in the ricotta cheese, 6 eggs, and the mozzarella cheese.

Stir in the sausage and onion.

Pour into a greased Pyrex 13×9 pan and bake 35-40 minutes.

Let cool slightly, cut into squares, and serve.


Serve with a side salad or fruit
