Cranberry Fruit Bread

This slightly sweet cranberry fruit bread is great for breakfast or dessert



1 can whole berry cranberry sauce

2 cups pecan halves

1 cup mixed dried fruit–I use apples, apricots, cherries, and cranberries, cut into small pieces

1 cup raisins

4 cups all purpose flour

1 cup sugar

1 tablespoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

2 eggs

1 cup orange juice

1/4 cup shortening, melted

1/4 cup warm water


In a medium bowl, combine the nuts, fruits, raisins and 1/4 cup flour.  Toss together.

In a large mixing bowl, beat the eggs and sugar until fluffy. Beat in the orange juice, water, and shortening.

Slowly add two cups flour, the baking powder, baking soda, and salt. When just combined, add the remaining 1-3/4 cups flour. 

When just combined, beat in the cranberry sauce until everything is well combined.

Fold in the fruit and nut mixture and spoon into two 8 or 9 inch round pans that have been greased and floured.

Bake in a preheated 350 degree oven for 25-30 minutes (maybe a little more) or until golden brown on top and a toothpick inserted in the center comes out clean.


Serve now, or wrap in foil and freeze for up to three months
