Low Country Shrimp and Grits

Creamy, hearty Cajun comfort food



1 Package old fashioned grits

2 cups shredded Colby Jack cheese

1 large onion

34 garlic cloves, minced

1 green pepper

1 Package sliced mushrooms

1 pound Kielbasa

1 pound shrimp, peeled and deveined

1/2 cup butter

salt and pepper to taste

Juice of 1/2 lemon

1 teaspoon hot sauce


Prepare grits according to package directions, to make four servings.

Slice the onion and pepper into strips.

In a large skillet, melt the butter, then saute the onion, pepper, and mushrooms on medium heat. 

Cook 3-4 minutes, then add the garlic and cook another minute.

Add the shrimp and cook another 3-5 minutes until the shrimp turns pink.

Cut the kielbasa into quarters, and then into bite sized pieces. Stir into the pan.

Stir in the lemon juice, salt and pepper, and hot sauce. Let simmer until the kielbasa is heated through.

Spoon 1/4 of the grits onto a plate and top with 1/4 of the shrimp mixture.


I use turkey kielbasa, but you can use regular pork/beef kielbasa, or smoked sausage.
