I love apple season! We always end up buying tons of fresh, crunchy apples to eat and bake with, but by mid-winter, some of them start to get a little past their prime. Easy fix–make applesauce! This simple cake goes together in a snap, but screams AUTUMN!

Description

This moist, yummy cake is a snap to prepare but tastes like you fussed over it


Ingredients

Scale

1/2 cup butter

1 cup granulated sugar

1 cup apple sauce

1 teaspoon baking soda

1 cup seedless raisins

2 cups sifted all-purpose flour

1 teaspoon cinnamon

1/2 teaspoon ground cloves


Instructions

Using your stand mixer or hand mixer, cream the butter and beat in the sugar gradually.

Combine the baking soda and applesauce and blend into the butter and sugar mixture.

Stir in the raisins and the dry ingredients.

Pour into a greased and floured loaf pan and bake for 45-ish minutes in a preheated 350 degree oven, or until a toothpick inserted into the center comes out clean.

 

Notes

If you like nuts, use 1/2 cup raisins and 1/2 cup chopped walnuts or pecans.

This would also be great with dates or dried cherries instead of the raisins.
