The recipe for this lovely crumb-topped apple cake comes from The Complete Irish Pub Cookbook from 2012.

An excerpt from the recipe says:

“Apples have been grown in Ireland for many centuries–legend has it that Saint Patrick himself planted an apple tree in an ancient settlement outside Armagh City. Today, County Armagh is known as Orchard County, and celebrates its apples with festivals and apple-blossom tours.”

You can serve this County Armagh Apple Cake warm or cool, with custard, whipped cream, or ice cream if you’d like.

Ingredients

2 Large Apples (I used Granny Smith)

1-1/3 Cups All-Purpose Flour

2 Teaspoons Baking Powder

1 Teaspoon Ground Cinnamon

1/2 Teaspoon Salt

1/2 Cup Salted Butter

1/2 Cup Plus 1 Tablespoon Superfine or Caster Sugar

2 Large Eggs

1-2 Tablespoons Whole Milk

Confectioners Sugar

Streusel:

1 Cup All-Purpose Flour

1/2 Cup Superfine or Caster Sugar

Instructions

Preheat your oven to 350 degrees.

Grease a 9-inch round springform pan.

To make the streusel topping, rub the butter into the flour, until the mixture resembles bread crumgs, then stir in the sugar.

Peel, core, and thinly slice the apples.

In the bowl for your electric mixer, cream the butter and sugar until light and fluffy.

In a separate bowl, combine the flour, baking powder, cinnamon, and salt.

To the butter and sugar mixture, add the eggs, one at a time, adding a little of the flour mixture with the final egg.

Gently fold in half of the remaining flour mixture, then fold in the rest with the milk.

Pour the batter into the prepared pan, and smooth the top.

Cover with the sliced apples, and then sprinkle the streusel topping over the fruit.

Bake for one hour, or until lightly browned and firm to the touch.

Let cool in the pan before you remove the sides, and dust with confectioners sugar before serving.

Notes

If you’re having trouble finding caster sugar, this is the brand that I used
