Scottish Tablet

Many years ago, my friend Dennis (who was born and raised in Scotland) asked me if I’d ever made Tablet.
As this was before everyone had internet access at the tip of their fingers, I had to rely on finding a recipe in a cookbook, and couldn’t find one for YEARS.
This Tablet recipe comes from The Highlander’s Cookbook, from 1966. It has a consistency similar to fudge, and a flavor similar to vanilla frosting. It’s a little too sweet for me, but candy lovers rejoice!

This sweet candy is similar to fudge, and can be flavored with vanilla, maple, or any fruit flavoring that you like!
- Cook Time: 8-10 minutes
- Total Time: 0 hours
- Yield: 2 pounds
- Category: Candy
- Method: Stovetop
Ingredients
4 Cups Granulated Sugar
2 Cups Heavy Cream
1 Tablespoon Light Corn Syrup
2 Teaspoons Flavoring*
Instructions
In a large saucepan (I used a Dutch oven), Combine the sugar, cream, and corn syrup.
Bring the mixture to a boil, and cook to the soft ball stage of 235 degrees.
Set the pan into cold water in your sink, and add the flavoring and 1 cup chopped nuts if you’d like.
Beat rapidly with a wooden spoon, scraping the mixture from the sides of the pan.
When the candy gets thick, but before it stiffens, pour into a greased 8×8 or 9×9 pan.
Cool and cut into squares.
Notes
I used McCormick Vanilla Bean Paste, but you can use vanilla extract or any other flavor extract that you choose.
