This lovely brittle candy is a snap to make using your microwave! No candy thermometer needed.
The recipe is from the Taste of Home Christmas book, circa 2013.
It makes a great gift, packed into a nice little tin with some waxed paper.

Stir and microwave for another 2-1/2 minutes.
Stir in the nuts, cinnamon, and butter.
Microwave for another 2 minutes–mixture will be very hot, so please be careful.
Quickly stir in the baking soda and vanilla until light and foamy, and pour it onto the prepared pan.
Spread with a metal spatula, working quickly.
Cool completely and break into pieces.
Notes
You could absolutely make this brittle with other nuts and other spices–obviously peanut brittle, but pistachio and cardamom brittle or cashew and cinnamon brittle would also be lovely!
As with most candy, DO NOT TRY TO MAKE THIS ON RAINY DAYS!
