- Method: Baking
Ingredients
2 Cups Salted Butter, Softened
2 Cups Granulated Sugar
6 Large Eggs
3-1/4 Cups All-Purpose Flour
1/4 Teaspoon Salt
1/2 Cup Sparkling Apple Cider
Icing:
1-1/2 Cups Confectioners Sugar
1 Teaspoon Vanilla Extract
3 Tablespoons Sparkling Apple Cider
Instructions
Preheat your oven to 350 degrees
Coat a 10 inch tube pan with cooking spray–preferably Baker’s Joy.
Using your electric mixer, cream the butter and sugar until fluffy.
Add the eggs, one at a time, beating well after each one.
In a large bowl, whisk together the flour and salt.
Add half of the dry mixture to the mixer, then half of the cider. Mix and repeat.
Pour the batter into the prepared pan and bake for an hour and ten minutes, or until a toothpick inserted into the center comes out clean.
Let cool.
To make the icing, plop the sugar into a bowl, then whisk in the vanilla and cider until smooth. If it’s too thick to drizzle, add a bit more cider.
Drizzle the icing over the top of the cake, letting it run down the sides.
