Five or six years ago, I bought the Star Trek Cookbook and was really excited to try to make Quadrotriticale Bread from the TOS episode The Trouble With Tribbles. I tried three or four times before giving up because it just didn’t work for me.

This lovely Jimbalian Fudge Cake, on the other hand, turned out great!

Yes, I am aware that in the Voyager episode where Neelix makes this for Kes’ birthday, it’s an enormous cake with blue frosting, but that’s not the way the recipe is written.

I topped mine with toasted coconut, but if you’re a stickler for Star Trek tradition, you might want to use malted milk balls or something similar to replicate the “kabeebee nuts” Neelix used in the episode.

You do you, Boo.

This is just a good, old-fashioned fudge cake–can’t go wrong with that!

Ingredients

2 Cups Cake Flour

2 Large Eggs

1-1/2 Cups Granulated Sugar

1 Cup Whole Milk

1/2 Cup Vegetable Shortening

1 Teaspoon Baking Soda

4 Ounces Unsweetened Chocolate

1 Teaspoon Vanilla Extract

1/2 Teaspoon Salt

For the Frosting:

3 Ounces Unsweetened Chocolate

2-3/4 Cups Confectioners Sugar

7 Tablespoons of Heavy Cream

1/4 Cup Butter, Softened

1 Teaspoon Vanilla Extract

1/2 Teaspoon Salt

Instructions

Preheat your oven to 350 degrees, and grease, then line two 9 inch round cake pans with parchment and grease those as well (I use Baker’s Joy).

Melt the 4 ounces of chocolate in a double boiler or in a heat-proof bowl over simmering water. Let cool.

Combine the flour, baking soda and salt in a large bowl.

In your mixing bowl, beat the sugar and shortening until fluffy.

Beat in the eggs, one at a time until incorporated.

Beat in the cooled chocolate until completely blended into the mixture.

Alternately add the flour mixture and the milk, until the batter is well-mixed, then add the vanilla.

Pour the batter into the pans and bake for 30-35 minutes, or until a toothpick inserted into the center of a layer comes out clean. Let Cool and remove from pans.

To make the frosting, melt the 3 ounces of chocolate with the butter in a saucepan, then blend in 2 cups confectioners sugar, the cream, and the salt.

Cook and stir over low heat until it begins to bubble at the edges of the pot.

Remove from the heat and stir in 3/4 cup confectioners sugar and the vanilla.

Continue beating as the mixture cools, until it’s thick enough to spread.

Frost the layers and decorate as you please.

Notes

I filled the layers with raspberry jam because chocolate + raspberry +Yum!
